Vietnamese Summer Rolls with Prawn, Duck & Instant Noodles and a Chilli Peanut Butter Dipping Sauce.
For the Dipping Sauce
3 heaped tablespoons of cup peanut butter
Sprinkle of crushed peanuts
3 glugs hoisin sauce
Juice of a lime
4 splashes soy sauce
Pinch of brown sugar
Splash of sesame oil
Splash of chicken stock
Chilli Oil to taste
Salt to season (if needed)
For the Summer Rolls
18 king prawns (shelled, boiled for 2 minutes and cut in half)
1 roast duck breast
1 pack Vermicelli Instant Noodles
3 heaped tablespoons of Chilli Oil
12 round rice paper wrappers
A handful of bean shoots
Bunch of mint
Bunch of Thai Basil
Bunch of coriander
1 Lebanese cucumber, cut into thin slices lengthways
6 spring onions, trimmed and cut in half lengthways
6 romaine lettuce leaves, trimmed and cut in half
First, we’re gonna make the dipping sauce.
Grab a bowl, add the peanut butter, peanuts, hoisin sauce, lime, soy, sugar and sesame oil. Mix together. Add a little chicken stock to loosen it up then the chilli oil a bit at a time. Taste and season if needed. Put aside.
Now it’s time to make the Summer Rolls.
Grab a cast iron pan, make it nice and hot and add the prawns, cooking till a little blackened on the outside. Remove from heat and put aside.
Cut the duck breast into 24 slices. (use chicken if you don't have duck).
Place a pot of water on the stove, bring to a boil then turn off the heat. Steep your instant noodles for 2 minutes.
Okay, so when your noodles are done grab a strainer. Drain the noodles and place into a bowl and set aside.
Place a tea-towel on the bench and half fill a frypan with warm water.
Dip the rice paper into the water until it is soft then place on towel.
Add the prawns and the duck.
Top with some noodles. Add bean shoots, mint leaves, Thai basil leaves & coriander leaves.
Place the Cucumber slices on one side, the spring onions on the other and top with the lettuce.
Fold one side of the rice paper over the ingredients and roll tightly once.
Fold over the top and bottom of the rice paper and continue to roll until complete.
Repeat, using the rest of the ingredients… then the best bit… dip them in the sauce and eat them… out of control delicious.
