Episode 07 - Okonomiyaki 'Hangover' Pancakes

With a hangover caused by drinking enough to pickle a horse, Aaron decides the only choice is to attempt his own version of Okonomiyaki pancakes. Filled with last nights fried chicken, chorizo sausage, cabbage & instant noodles and topped with BBQ sauce, mayo and pickled onions these pancake abominations may be the only thing that saves Aaron from himself.

To cook this dish, you will need:

Pinch of salt 

Pinch of sugar

Splash of vinegar

¼ red onion, finely sliced

1 packet of instant noodles

Splash of vegetable oil

Some hot sauce

1 chorizo sausage

Some leftover take away fried chicken

3 leaves of cabbage, finely chopped

2 eggs

1 ¾ cups of milk

2 cups of self-raising flour

Okonomiyaki sauce

Japanese Mayonnaise

1 spring onion, finely sliced

 

Add the salt, sugar, vinegar and mix together in a small bowl.

Add the onions and submerge in the liquid. Put aside.

Put a pot of water over a medium heat and bring to a boil then add the noodles. 

Cook for 2 minutes then strain and drizzle over a little oil to stop them sticking together. Set aside.

Grab a pan, place it over a medium heat and add some oil. Add the chorizo and cook until browned. Add the cabbage and cook till soft then add the leftover fried chicken, then the noodles, some hot sauce and mix together.

Set aside.

Grab a blender, add the eggs and the flour and blend till you have a batter. Pour into a bowl.

While out the pan and place it over a medium heat, add some mixture and cook till brown on one side, flip and repeat then set aside.

Add some more mixture to the pan, cook till brown on one side, flip, and cook until done.

Place 1 pancake on a plate, and cover with the sausage, cabbage, chicken and noodles mix. Top with other pancake then slide onto your plate.

Top with drizzled Okonomiyaki sauce and Japanese Mayonnaise.

Finish the pancakes with pickled red onions and some spring onions to serve.
