Instant Noodle Soup with Roast Duck, Enoki Mushrooms and a Poached Egg.
25th of August 1958 is a very special date in instant noodle history. It’s the day when The Godfather, Momofuku Ando and his company Nissin released Chikin Ramen, the first ever packet of instant noodles.
So, to celebrate we’ve put together this super easy and tasty dish that you can cook, start to finish, in under 5 minutes (well as long as you start with boiling water, if not, it may take longer).
To Make this Dish You Will Need
1 packet of instant noodles
A sachet of dashi powder
Glug of soy
Splash of Mirin
A handful of Enoki Mushrooms
A couple of slices of roast duck
Handful of spinach
Handful of sliced spring onions
Place a saucepan with about a litre of boiling water over a high heat.
Add the instant noodle flavour sachet and the dashi mix, soy and mirin to the water. Stir and taste. If you need some more flavour this is the time to do it so feel free to season with more soy.
Add the mushrooms and the instant noodles. Cook for 1 minute.
Add the duck and the spinach.
Crack an egg in the water, cover and cook for two minutes.
When ready pour the soup carefully into a bowl and garnish with some spring onions.
